Kitchen Manager
This is a role designed for a leader who thrives in the heat of service. You will be a primary fixture on the line, ensuring every plate meets our standards, while dedicating focused time to the administrative and operational health of the kitchen.
The Split:
80% Tactical (On the Line): You are the lead cook during peak hours, setting the pace, maintaining quality, and mentoring staff in real-time.
20% Administrative (Management): Off-line time dedicated to ordering, inventory management, scheduling, and labor/food cost analysis.
Culinary & Menu Responsibilities:
Expert Cooking: Act as the lead line cook, mastering all stations and ensuring every dish is prepared to exact specifications.
Menu Design & Innovation: Collaborate with ownership to design and refine a menu that pairs perfectly with our craft beers. This includes developing seasonal specials and "event-ready" food items.
Recipe Standardization: Create and maintain clear, written recipes and plating guides to ensure consistency across all shifts and staff members.
Core Management Responsibilities:
Staffing & Leadership: Oversee the hiring, training, and weekly scheduling of kitchen personnel. You are responsible for maintaining a positive, high-energy, and professional culture.
Inventory & COGS: Manage all food ordering and inventory. You will track food costs (COGS) and minimize waste to ensure the kitchen meets its financial margin goals.
Operational Efficiency:
Optimize kitchen flow to maintain fast ticket times during high-volume periods.
Health & Safety: Maintain a "tour-ready" kitchen at all times. You will ensure full compliance with all local health department regulations and internal cleanliness standards.
Qualifications:
Experience: 2+ years of lead line or kitchen management experience in a fast-paced environment.
Financial Savvy: A solid understanding of food cost percentages and labor management (or at least a strong eagerness to learn)
Leadership Style: A "lead-by-example" mentality. You don’t just delegate; you do.
Communication: Ability to communicate clearly with both staff and customers alike.
Physical Requirements: Ability to stand for long periods and lift up to 50 lbs.
Line Cook
This role is designed for someone who thrives in a fast-paced kitchen and takes pride in producing consistent, high-quality food. As a Line Cook, you will play a key role in executing our menu while working closely with the Kitchen Manager and fellow team members to maintain smooth service.
Core Responsibilities
Prepare and cook menu items according to Sunshine Brewing Company recipes and plating standards.
Set up and maintain your station before, during, and after service to ensure efficiency and organization.
Maintain consistent portioning and presentation to ensure every dish meets our quality standards.
Assist with daily prep tasks such as chopping, portioning, and preparing ingredients for service.
Service & Kitchen Workflow
Work efficiently during peak service periods while maintaining attention to quality and detail.
Communicate clearly with other cooks and front-of-house staff to ensure timely ticket completion.
Follow the direction of the Kitchen Manager and assist with maintaining a smooth kitchen flow.
Cleanliness & Safety
Maintain a clean and organized workstation throughout your shift.
Follow all food safety and sanitation procedures in accordance with health department standards.
Assist with kitchen cleaning tasks, including equipment, dishes, and closing procedures.
Teamwork & Culture
Support fellow team members to ensure a positive, collaborative kitchen environment.
Be dependable, punctual, and ready to contribute to the success of the team.

Qualifications
Experience: Previous kitchen or line cook experience preferred but not required; willingness to learn is essential.
